Ayurveda - Philosophy of Indian Food

Ayurveda which is composed of 2 words Ayus and Vedas. Ayus means life and Vedas means study or knowledge so basically Ayurveda means knowledge of life which begins from the basic ingredient "food".
Ayurveda actually covers the whole aspect of life and its origins date back to 1000BC.
It is concerned with healthy and long life of humans.
The basic preaching is that we live to eat and not eat to live and the origin of the phrase "you are what you eat" is from Ayurveda.
Life is a combination of mind ,body and soul as a healthy body will have healthy thoughts which will nurture the soul to attain salvation.

Ayurveda classifies Indian food in 6tastes:-
a) Sweet
b) Salty
c) Pungent
d) Bitter
e) Astringent
f) Sour

Any deviation in the above said tastes create an imbalance in body elements thereby leading to various diseases.
In order to create a perfect balance the Thali concept evolved .

Another classification is on the basis of
a) Rasa
b) Veerya
c) Prabhav

An important classification of human mind is as follows:-
SATYAVIK or Satvik:- A highly intellectual person who is hungry for knowledge and with a curious mind so has to be served foods like milk &milk.products, vegetables, fruits,nuts, honey etc which keep the mind calm yet active.

RAJASIK :- People who engage in activities and require energy have to be served food what most people eat.

TAMASIK:- The food which brings out the lowest or the crass qualities in a human being like meat , sharp and spicy,strong smelling like garlic and onion.
